KEEP IT SIMPLE
Braise beef covered.
Soften chiles.
Smooth chile sauce.
Fry tacos.
STEP BY STEP
Season beef with salt and pepper; brown in oil in batches.
Cover chiles, tomatoes, yellow onion, cinnamon, bay and peppercorns with water. Simmer covered 10 minutes.
Blend softened mixture with one cup cooking liquid, broth, vinegar, garlic, cumin, oregano and cloves. Vent hot blender safely; strain over beef.
Cover; simmer gently 3–3 1/2 hours until shreddable. Shred beef.
Dip tortillas in broth fat. Fill with cheese and beef; fold and fry 1–2 minutes per side. Serve with onion, cilantro, lime and dipping broth.
For each leftover bowl, cook one noodle packet separately. Top with 1 cup birria broth and 1/2 cup shredded beef, reheated to 165°F.
SAVE THE MAKING
Compare these finished options with making your own.
A fully cooked birria meal skips the long braise; seasoning packets are not finished food.
