KEEP IT SIMPLE
Makes twelve even muffins.
Measures baking ingredients.
Combines batter without a mixer.
Makes and portions the ganache center.
STEP BY STEP
Heat oven to 350°F. Line the pan and lightly grease liners.
Whisk cocoa, flour, sugar, leaveners and salt; stir in chocolate chips.
Whisk eggs, milk, vanilla and vinegar. Stir into dry ingredients with melted butter just until combined.
Divide among twelve wells, heaping the batter. Bake 20–25 minutes until a tester finds no wet batter.
Rest 5 minutes, then move to a rack to cool completely.
Heat cream until simmering. Remove from heat, add filling chocolate, honey and salt, and wait 2 minutes. Stir smooth and let cool until thick enough to pipe.
Cut a small cavity into each cooled muffin without cutting through its base. Pipe ganache into the cavities. Refrigerate filled muffins and any extra ganache.
