STEP BY STEP

Make it

  1. Prepare

Heat water to 195–205°F. Rinse the fitted paper filter, discard rinse water and add coffee.

  2. Bloom

Start a timer and pour 50 g water over all the grounds in about 10 seconds.

  3. Build

At 40 seconds, pour slowly to 150 g total. At 1:10, pour to 250 g.

  4. Finish

At 1:40, pour to 350 g. Let drain; total brew time should be roughly 2½–3½ minutes.

  5. Serve

Remove the dripper and swirl the cup before drinking.

Good to know

  • If water stalls, try a slightly coarser grind next time.
  • The 350 g is brewing water; some stays in the grounds.
